These dishes are usually made with meat and a lot of fresh vegetables like beans and corn,

as well as garlic, onions and tomatoes.

Of course, one important characteristic of Mexican cuisine is that it is spicy with chili playing a key role.

Actually, there are various types of chili to use when you cook a Mexican dish,

but what is amazing with Mexican cuisine is that the taste of all these spices is cooled down with fresh vegetables.

So, you feel like you are eating something hot and spicy, but cool at the same time.
